The crocus (here: Crocus tommasinianus) belongs to the genus of the iris family. These are mostly herbs with subterranean rhizomes or tubers, narrow, often grassy leaves and diversely shaped flowers. The name crocus is probably derived from the Hebrew karkom. Salomon had already described the plant. The white crocus is wild in the Alps. Species native to the Mediterranean and the Orient are cultivated as spring flowering plants. The saffron crocus is grown mainly in Spain. Its flowers are picked shortly after flowering, the scars are plucked out by hand and then dried. After drying you will gain about one kilogram of saffron from about 200,000 flowers. It contains the red-yellow dye crocin and the essential oil safranol. Saffron is used for seasoning and coloring food.
