On July 25, 1924, the cheese dairy was founded in the Upper Austrian Cistercian Abbey Schlierbach by Brother Leonhard. Since time immemorial, the Cistercians have dealt with agriculture and horticulture, livestock and craft, the concept of sustainability is also an important concept in everyday life. Consequently, the conversion of the cheese dairy to a pure organic farm in 2012 took place after organic cheese specialties had been produced since 1999. In 2008, the production of cheeses made from sheep's and goat's milk started. Today Schlierbach Abbey Dairy is the largest monastery cheese dairy in Europe, the only Austrian market leader in soft cheese with red culture. Long-term intensive cooperation with organic farmers from the region guarantees the highest quality and secures the preservation of the farms for future generations. For example, 64 organic cow's milk companies, 47 organic goat's milk suppliers and 28 organic sheep's milk companies from Upper and Lower Austria cooperate with the cheese dairy, where about 40 employees produce about 1,000 tonnes of organic soft, organic cut and organic cream cheese a year to produce. Traditional production processes and maturing in the monastery cellar provide for the very special taste of the cheese specialties. A classic is the Schlierbacher organic castle cheese, a soft cheese in the varieties "Classic" and "Exquisit" in the traditional red or yellow packaging. Organic cow's milk soft cheese with red culture have sounding names like Bio-Paulus and Bio-Petrus. A special variant are those soft cheeses, which are matured during the ripening with vineyard of organic Zweigelt and thus receive a particularly dark bark and a distinctive taste. Camembert, cream cheese with or without chives and sliced cheese are made from organic sheep's or goat's milk - not only cow's milk allergic people rave about these specialties. The brand motif shows the traditional packaging of a "Schlierbacher Klosterkäses" from earlier times with a picture of the Schlierbach Abbey.
